Leaving out the sugar in the preparation of rice and only using red vinegar instead, the rice cakes here are made up of a mix of new and aged rice to create a unique texture and consistency. The omakase menu is specifically created to introduce the best of sushi to the guests — presenting light tasting sushi first and then proceeding to offer the heavier ones. It's also possible to request to be served only Nigiri sushi, but there's a special omakase course that adds tsumami (appetizer dishes) prior to the nigiri. Sashimi, soup, and vinegared mackerel are among the dishes for appetizers. Sushi Matsumoto has worked hard to establish itself as a top sushi restaurant in the city.
